Hey guys!! It’s back to school time and that means at night we are all running around like crazy packing lunches, signing permission slips, doing bathtime, last minute homework assignments, it can get a little chaotic! Now let me show you how I create a dinner that can feed a crowd, everyone loves, can be made in minutes and is under $15 for the whole thing thanks to the fact that I can make the whole dish only using Private Label products.
My Chicken Queso Mac & Cheese is a weeknight staple in our house and it feeds us all with plenty of leftovers for lunches. Not only is this meal delicious, fast and easy on my wallet but it can also be made in one pot!! Yes!!! More money in my pocket, more time on my clock and less dishes in my sink!
The great thing about this meal is if I have stocked up at Harris Teeter like I usually do then I always have all the ingredients to make this meal on hand!
So quick!! And so yummy and comforting!
- 1 pound chicken tenderloins
- ½ cup frozen onions
- 10 ounces rotini pasta
- 3 cups chicken stock
- 2 cups milk
- 1 small can green chiles
- 3 cups pepperjack cheese
- Garlic salt
- In a large pan saute up your tenderloins and onions in bit of butter. Sprinkle with garlic salt and pepper.
- Once brown add in the chicken stock, milk, green chiles and pasta.
- Boil for about 15 minutes until pasta is cooked through and most of the liquid absorbed.
- Add in the cheese and stir to melt.
- Top with extra cheese and scallions and serve!!!
