  5. Do you use instant or cook and serve lemon pudding? It looks so delicious and I love poke cakes, anything easy in summer.

    1. I don’t let it cool, I just poke it, pour the pudding on the pop in the fridge :) hope you like it !!

  6. I have been making a version of this for years !!!!!!!!! I use a cook-type lemon pudding, and pour it over a white cake hot !
    I don’t poke holes either….. Yes, Cool Whip on top !
    I think a lemon jello poke cake would be awesome! I also never tried instant lemon pudding ! LOL So this seems a nice combo !
    They do make a lemon cake mix available, so that would also boost the flavor !!!!!

    Soooooo…. I would like to try a poke cake with COFFEE flavored gelatine !!! Maybe in a German Choc Cake ???
    What do you think ??? I think I might add espresso powder to the cake too …..

    1. That’s right :) One 8 oz container of cool whip but it is 2 of the smaller packages of instant pudding. Thanks for stopping by!

  8. Made this today…sadly was disappointed it wasn’t as lemon tasting as I expected . I love poke cakes, so I think I will take the suggestion of using lemon cake mix as well. Thanks for sharing though. Have a great weekend!

  9. Making this for my daughter’s Birthday celebration. She live Lemon!
    Can it be made in round cake pans as a layered cake?
    Not sure if some of the pudding sits above the cake after fridgeration, it would slurry off the first
    Layer of round cake.

    1. Sadly I do not think this would work as a layer cake, the pudding would make things too slippery. Hope you daughter has a happy birthday!
