Hey guys!!  Woo it is getting warm out there!  Summer time screams long days full of sunshine, swimming and sandy toes, nights full of lighting bugs, grilling and cool sheets.  To me there is no better way to end a perfect summer night than with an ice cream sundae, a hot fudge ice cream sundae to be exact.
Who can resist the combination of cool, creamy ice cream topped with warm gooey fudge?  This girl can’t!  Then you get to add the topping which adds just another whole layer of fun and flavor.
I found some fabulous flavors of toppings at the store like Chocolate Coconut, Hot Fudge, Dark Chocolate and Salted Caramel.  These are delicious, decadent and the perfect way to make your sundae gourmet.

Now you can serve up a big scoop of vanilla and pour any of these amazing toppings over it and have an incredible sundae.  I, however, will be showing you how you can take your sundae to the next level and add some twists to make your sundae a scrumptious work of art.
Take a simple vanilla and caramel sundae, I’m going to switch it up into an awesome Salted Caramel, Honey Roasted Roasted Cashew Pretzel Sundae.  Woo that is mouthful to say and a mouthful to eat but boy is it delicious.  The Salted Caramel topping is a rich, buttery caramel with a hint of salt that pairs perfectly with creamy vanilla.  I kick up the salty sweet flavors by adding honey roasted cashews and pretzels for an out of this world flavor combination.

I knew toasted almonds would be the perfect match for the Chocolate Coconut topping.  A scoop of vanilla made the base for this amazing Chocolate Coconut topping that was perfectly chocolaty with the flavor of toasted coconut.  The flavors were so clean and vibrant, the coconut tasted so fresh and wasn’t overwhelmed by chocolate, I could taste each flavor.  This topping was so good I could just eat it right out of the jar and be content but instead I drizzled it over the ice cream and added toasted almonds and coconut for a dreamy sundae.

The Dark Chocolate topping was just made to be decadent and begs to be used in a sinful over the top sundae.  I knew this Dark Chocolate Brownie Raspberry Sundae was the perfect vessel for this deliciously dark fudge.  I layered dark chocolate brownie chunks, raspberry jam, chocolate ice cream, fresh raspberries and the Dark Chocolate Fudge all in a mason jar for an amazing upgrade from a normal brownie sundae that is made to be savored spoonful by spoonful.

Dark Chocolate Brownie Raspberry Sundae

Ingredients

  • Dark Chocolate Brownies
  • 5 ounces semisweet or bittersweet chocolate, chopped
  • 2 ounces unsweetened chocolate, chopped
  • 8 tablespoons 1 stick unsalted butter, cut into quarters
  • 3 tablespoons dark cocoa powder, you can use regular or dutch if you cannot find dark
  • 3 eggs
  • 1¼ cups granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray. Line the pan with overlapping pieces of foil and spray the foil.
  2. In a medium heatproof bowl set over a pan of almost-simmering water, melt the chocolates and butter, stirring occasionally until smooth. (Or, melt in the microwave for 30-second increments, stirring after each, until melted and smooth.) Whisk in the cocoa. Set aside to cool.
  3. Whisk together the eggs, sugar, vanilla, and salt in a bowl until combined, don't over whisk. Whisk the warm chocolate mixture into the egg mixture; then stir in the flour until just combined. Pour the brownie mixture into the prepared pan and spread into the corners.
  4. Bake until slightly puffed and a toothpick inserted in the center comes out with a small amount of sticky crumbs, 35 to 40 minutes. Cool on a wire rack to room temperature. Remove the brownies from the pan using the foil handles and cut into little bite sized squares.

  6. In a sundae glass or mason jar layer the bottom with brownie chunks. Then top with a scoop of chocolate ice cream. Drizzle some Dark Chocolate topping over the ice cream. Spoon on a little raspberry jam and fresh raspberries. Repeat the layers again making sure to top the whole thing off with more fresh raspberries.
  7. Grab a spoon and dig in!
My last twist on your average sundae is a S’mores Sundae.  I toasted mini marshmallows on top of graham crackers and layered them between chocolate ice cream and Hot Fudge creating a yummy deconstructed S’mores Sundae which is heaven in a spoon.  The hot fudge was perfectly warm and melded with the toasty marshmallows and graham crackers for an outstanding sundae experience.
