Hey y’all!! This warm weather we are having today reminds me that Spring is just around the corner. I love Spring and to me Spring calls for brunches, late breakfasts filled with eggs and all sorts of other yummy dishes. Since we are such late sleepers on the weekends most of our breakfasts end up being brunches anyway lol!
I usually make a ton of bacon and some biscuits and gravy and all that good stuff for brunch but now that the weather is changing I wanted to change that up a little bit too.
When doing my weekly shopping at Walmart I spotted these Alexia Sweet Potato Fries, Onion Rings and Smart Crinkle Cut fries and knew I wanted to incorporate them into a yummy brunch for the weekend.
I have always been a big fan of the Alexia products, I am not going to be making onion rings or fries from scratch any time soon (if ever lol) so I love picking these up for convenience. I choose Alexia because they are a high quality product made with all natural ingredients which I love and plus they are just so darn delicious! I can use the fries for a side dish with hot dogs, top a burger with the onion rings and I love serving their Sweet Potato Fries with salmon. I always keep them on hand because they are so versatile.
Like I mentioned earlier Spring brunches have to include eggs, so I am whipping up Egg Topped Ring and Fry Hash, yummm!
By using the Alexia rings and fries I can get this breakfast on the table in no time.
This hash is amazing, the Alexia Smart Crinkles are my favorite and in this hash they lend the perfect potatoey goodness. I use their Chipotle Spiced Sweet Potato Fries in this hash for a pop of color and heat. The Spicy Sweet Potatoes pack so much smoky taste they add all the flavor you need to this dish. Of course what is hash without onions and peppers? I do a quick saute on a green bell pepper and for the onion part I use Alexia Onion Rings of course! These might be my favorite, I can’t choose!!!
I just mix all that up together, cutting up some of the bigger fries and rings.
Then they are just ready to be topped with a luscious runny fried egg.
- 1 bag frozen Alexia Onion Rings
- 1 bag frozen Alexia Spicy Sweet Potato Fries
- 1 bag frozen Alexia Smart Crinkle Cut Fries
- 2 green bell peppers chopped
- Prepare each of the fries and ring by baking according to bag instructions.
- Meanwhile saute up your chopped bell pepper.
- When fries and rings are done give them a slight chop and mix with bell pepper.
- Fry your eggs to your likeness (though runny is delicious here)
- Top the hash with your fried egg and serve!
This dish is simple, full of flavor and delicious. It is also a great way to use up any leftover fries and ring you may have (I can’t imagine having leftovers lol, they are sooo good!!)
This simple recipe takes no time to prepare but are sure to be the hit of the brunch table.
So next time you are out at Walmart grab a few bags of Alexia rings and fries and a great brunch (or side dish for dinner) is never far away!
