Today I am going to show you an awesome recipe that’s got a bit of spice and some delicious corn all tucked into a lean chicken breast.

So back to the recipe. It’s January which means at least for this month we are all trying to eat a littler healthier right? This recipe is just the ticket! Its is wholesome and has just enough cheese to make is appealing for even the pickiest palettes. I just start with that crowd pleaser… chicken breasts and cut a little pocket in the side. Next I just drain (so easy) a Sweet Corn Libby’s® Vegetable Pouch and pop it all in a bowl with some cream cheese and shredded pepperjack cheese.
Next I just fill up each breast with the filling and sprinkle with seasoning. You can use whatever seasoning floats your boat here, chicken seasoning, taco seasoning or just good old S&P.
- 4 chicken breasts
- 4 oz softened cream cheese
- 1 1/12 cups shredded pepper jack cheese
- Libby's® Vegetable Pouch Sweet Corn drained
- Seasoning for chicken
- Preheat your oven to 400
- Make a pocket slice in the side of each breast
- Mix your cream cheese, corn, and pepperjack cheese together
- Stuff each breast with the mixture
- Season with salt and pepper, chicken seasoning or taco seasoning
- Bake in oven 20-25 minutes until chicken is done and juices run clear.
This dinner takes just minutes to prepare and is full of flavor. The sweet pop of the corn goes great with the creamy spiciness of the cheese and it is sure to have everyone asking for seconds.
